Caramelised Red Onion Chutney Beef Burgers

Star ingredient: Caramelised Red Onion Chutney
Meal theme: Friday night fakeaway / Family dinner
Prep time: 15 mins
Cook time: 10 mins
Serves: 4

Ingredients:

  • 500g Scottish beef mince

  • 2 tbsp everythingCHILLI Caramelised Red Onion Chutney (plus extra for topping)

  • 1 small red onion, finely chopped

  • 1 egg

  • Salt & pepper

  • 4 soft burger buns

  • Lettuce, sliced tomato, slices of cheddar or any favourite cheese

  • Optional: mayo, gherkins

Method:

  1. In a bowl, mix the beef mince, chopped onion, egg, 2 tbsp Caramelised Red Onion Chutney, and seasoning.

  2. Shape into 4 patties and chill for 10 mins to firm up.

  3. Heat a frying pan or grill to medium-high. Cook the patties for 4–5 mins each side or until cooked through.

  4. Toast the buns, then build the burgers with lettuce, tomato, cheese, and why not an extra dod of Caramelised Red Onion Chutney, or some Smokin' Hot Red Onion Chutney for a heat boost.

Original Chilli and Cheddar Toastie

Star ingredient: Original Chilli Relish
Meal theme: Quick comfort lunch
Prep time: 5 mins
Cook time: 6-8 mins
Serves: 2

Ingredients:

  • 4 slices sourdough or farmhouse bread

  • 100g mature Scottish cheddar, grated

  • 2 tbsp everythingCHILLI Original Chilli Relish

  • Butter for spreading

Method:

  1. Butter one side of each bread slice.

  2. On the unbuttered side of two slices, spread the chutney and top with cheese.

  3. Close with remaining slices (buttered side out).

  4. Fry in a hot pan or toastie maker until golden and the cheese is melted, about 3–4 mins per side.

Sausage & Beetroot Chutney one pan dinner

Star ingredient: Beetroot & Apple Relish
Meal theme: One-pan midweek dinner
Prep time: 10 mins
Cook time: 25 mins
Serves: 3-4 depending on how hungry!

Ingredients:

  • 6 good quality pork sausages

  • 1 large onion, sliced

  • 2 medium potatoes, diced

  • A few roughly chopped carrots

  • 1 apple, cored and sliced (optional)

  • 3 tbsp everythingCHILLI Beetroot & Apple Chutney

  • Salt, pepper, a splash of oil

Method:

  1. Heat oil in a deep frying pan. Brown sausages all over (about 8 mins), then set aside.

  2. In the same pan, fry onions and potatoes (and throw in the carrots) for 10 mins until soft and golden.

  3. Optionally add apple slices and cook 3 mins. Return sausages to the pan.

  4. Stir in the Beetroot & Apple Relish, season, and cover. Simmer gently for 5–7 mins until everything is sticky and cooked through. A little stock, thin gravy or water can be added to keep everything juicy.

Pepper & Pear snack board

Star ingredient: Pepper & Pear Relish
Meal theme: Relaxed grazing to Party canapes
Prep time: 5 mins
Cook time: nowt
Serves: expandable :)

Ingredients:

  • Selection of oatcakes, ricecakes and crackers

  • Good quality rich pate and/or tapenade

  • Ample amount of Pepper & Pear Relish

Method:

  1. Spread the pate or tapenade generously on a selection of crackers

  2. Add a teaspoonful of Pepper & Pear Relish on the top of each

  3. Eat and repeat! This one's just as good served to guests as an appetiser as it is with a glass of something lovely with your feet up at the TV.

Orange & Turmeric Marmalade Flapjack

Star ingredient: Orange & Turmeric Marmalade
Meal theme: Snack on the go
Prep time: 10 mins
Cook time: 25 mins
Serves: about 9 squares

Ingredients:

  • 150g rolled oats

  • 100g plain flour (or a few more grams of oats and some dried fruit)

  • 125g unsalted butter

  • 75g soft brown sugar

  • 4 tbsp everythingCHILLI Orange & Turmeric Marmalade

  • Pinch of salt

Method:

  1. Preheat oven to 180°C (160°C fan). Line a square baking tin.

  2. Melt butter and sugar gently in a pan. Stir in marmalade until smooth.

  3. Mix in oats, flour, and salt. Press into the tin.

  4. Bake for 20–25 mins until golden. Cool, then slice into squares.
